Happy Owl-o-ween!

Looking for a fun treat to serve up this Halloween that’s not super tricky?  I’ve got the perfect dessert for you to bring to any of your "spooktacular" events this weekend.  So how about we forget the diet for a minute and dig into this devilishly delicious desert!


  Here’s what you’ll need:


1 Cake mix + ingredients from the back of the box (I used a pumpkin spice mix because I’m basic)
1 can frosting (my cake mix came with frosting mix which I dyed black)
Sprinkles
12 Reese’s peanut butter cups
24 mini Oreo cookies
24 edible candy eyeballs (I found mine at Target, they sell them at Hobby Lobby too)
12 orange yogurt covered raisins (I found these in the Halloween candy isle at Target)
2 ounces chocolate CandiQuik
12 short lollipop sticks

Instructions:

1. Bake the cupcakes according to the package directions.  I used a pumpkin spice cupcake mix from target.  I would also recommend a regular chocolate cake mix if you’re not a pumpkin person.  Let them cool completely once out of the oven.  I made my own frosting because the cupcake package came with a mix but if yours doesn’t chocolate frosting works just as well.  The package came with white cream cheese frosting so I dyed it black to be spookier.  Frost and top your cupcakes with sprinkles then set them aside.


2. Melt the CandiQuik in the microwave for about 2 minutes on about 30 percent power.  Stir until creamy.  If the chocolate isn’t completely melted pop it back in the microwave for another minute on low power (high power will burn the chocolate).

3. Use a sharp knife and cut a small circle into the side of the Resse’s peanut butter cup.  Dip the end of the lollipop stick into the chocolate and very carefully insert the stick into the cup.


4. Twist apart the Oreo cookies (you will need the side with the frosting).  Attach a candy eyeball to the frosting using the melted chocolate.  Attach the Oreo to the top of the Reese’s cup with more chocolate. Dip the back of the raisin in chocolate and attach it to the cup.  Let set 10 minutes before sticking the owl in the top of the cupcake.  Makes 12 cupcakes.


Side note:  It’s helpful to use a toothpick to spread the chocolate onto the Oreos, raisins and candy eyeballs.


Just because we can't Trick-or-Treat anymore doesn't mean we can't enjoy a sugar rush!
